My first week back home I assessed the pantry and freezer and made sure to stock up on some things that will make back to school a little easier for me. Preparation is key my friends!
My whole family loves Van's frozen waffles so I 've got a freezer full to serve up for breakfast and snacks.
Mornings are certainly hectic, but I know the breakfasts at school aren't quite as healthy as what I provide them with. Therefore, we try to have breakfast at home whenever we can and fall back on school breakfast when we are running late.
I think the hardest part of this breakfast meal is choosing which type of Van's waffles to use. There are so many options!
They are all so delicious but the Gluten Free Ancient Grains Original waffles are my favorite. They are baked with ancient grains, free of gluten, dairy, egg or soy and are packed with 23 grams of nutrient-dense whole grains. Another bonus is the 6 grams of fiber they have per serving, a major plus in my eyes.
Remember fiber helps to fill us up so we won't be hungry shortly after eating. This is super important for our kiddos since they have to adhere to the schools’ meal schedule and not their own. If their stomachs aren't grumbling, they will be able to concentrate better.
Van's really makes it easy for kids to enjoy their waffles. They taste great, plus there are so many ways to top them!
I've been thinking of making a fruit pizza for awhile, but what better way to bump up the nutrition that substitute the cookie crust with a Van's whole grain waffle.
Since my kids love cream cheese, that was a no brainer to keep the whipped cream cheese topping that is traditionally used in fruit pizza.
Buying the whipped cream cheese makes this spread come together in just a minute and it's slightly sweet flavor pairs great with the fresh fruit. Speaking of which, my kids adore all fruit so whenever that is part of their breakfast they're happy kids. I loaded these with as much as I could!

Ingredients2 GF Ancient Grains Waffles, Ingredient 1, 3 tablespoons whipped cream cheese (recommend the pre-whipped kind, found next to the regular cream cheese), 1½ teaspoon maple syrup, ½ teaspoon vanilla extract, Fresh Fruit:, 4 strawberries sliced or diced, 4 rasperries cut in half, ¼ cup blueberries, 1 kiwi diced,
Toast waffle according to package instructions. In a small bowl whisk together whipped cream cheese, maple syrup and vanilla. Once waffles have cooled slightly, spread cream cheese topping on each waffle. Top with a variety of fresh fruit. Enjoy!
