Van's Blueberry Walnut Parfaits

My husband is a professional baseball coach. For us, that means a summer filled with road trips. Just this past week, we drove from Arizona to Montana with our two kids. When we are on the road, we try our best to eat well, just like we would at home. This means preparing ahead of time and packing a cooler full of wholesome meals and snacks. It’s so nice to not have to rely on fast food (plus, our own food tastes better anyways).
For this trip, I packed a bag with nuts, snack bars, jerky, and fruit leather. Then I filled the cooler with fruit, veggies, hummus, meat, cheese and pickles. That covered us for lunch, dinner, and snacks, but what about breakfast?
The second morning, we made our own parfaits using stackable plastic Tupperware and spoons from home. It was easy to throw together some yogurt, berries, and Van’s Blueberry Walnut Granola before we hit the road.
