Pumpkin Spice Protein Bars

2 cups Cranberry Almond Granola, ¼ cup Swerve Sugar Replacer (or natural sweetener of choice), 1 teaspoon pumpkin pie spice blend, ½ teaspoon ground ginger, ¼ cup pumpkin seeds, ¼ cup flax and/or sesame seeds, 2 – 2 ½ scoops vanilla protein powder (my preference is Designer Whey Natural Vanilla), ¾ canned pumpkin, 1 teaspoon vanilla or almond extract, 1½ unsweetened vanilla almond milk,


Preheat oven to 350 degrees. In a large mixing bowl, combine oats, Swerve, pumpkin pie spice, ginger, seeds, and protein powder. In a separate small bowl, combine pumpkin, vanilla extract, and almond milk, and mix well. Gradually add pumpkin mixture to the dry ingredients, stirring until well-combined.

Spread onto 9x13 baking pan lined with parchment paper. Bake for 30 minutes or until golden brown. Refrigerate leftovers.
