Pumpkin Spice Protein Bars

During the holiday season, it can be easy to overindulge. But with a few ingredient swaps, you can turn your fall favorites into less-guilty pleasures.
Craving pumpkin? These pumpkin spice bars are a delicious guilt-free treat with all of the flavors of fall. With four grams of fiber and more than an egg’s worth of protein per serving, they can pull double-duty as a grab-and-go breakfast on the run, or as an afternoon pick-me-up paired with a cup of coffee or tea.
Ingredients2 cups Cranberry Almond Granola, ¼ cup Swerve Sugar Replacer (or natural sweetener of choice), 1 teaspoon pumpkin pie spice blend, ½ teaspoon ground ginger, ¼ cup pumpkin seeds, ¼ cup flax and/or sesame seeds, 2 – 2 ½ scoops vanilla protein powder (my preference is Designer Whey Natural Vanilla), ¾ canned pumpkin, 1 teaspoon vanilla or almond extract, 1½ unsweetened vanilla almond milk,
Preheat oven to 350 degrees. In a large mixing bowl, combine oats, Swerve, pumpkin pie spice, ginger, seeds, and protein powder. In a separate small bowl, combine pumpkin, vanilla extract, and almond milk, and mix well. Gradually add pumpkin mixture to the dry ingredients, stirring until well-combined.
Spread onto 9x13 baking pan lined with parchment paper. Bake for 30 minutes or until golden brown. Refrigerate leftovers.
