How fun are these little Jammy Granola Crumble Squares!! My daughter has been begging me lately to let her cook more. She wants to do it all herself. Ok, she’s 8 so I can’t let her do too much, but I thought it would be fun to introduce her to some basics of cooking. A couple of weeks ago, we were getting ready to go out of town for our spring break road trip to San Diego and she asked what snacks we were packing. I told her the usual stuff and she asked me if we could make something fun together for the trip. What a perfect opportunity to have her help me cook! We had a discussion about what to make and we decided to make something that can be eaten for breakfast, as well as for a snack. Trying to figure out what to make…I decided to start going through the pantry to see what ingredients I had in the house. I had a bag of Van’s new Gluten Free Banana Nut Soft Baked Whole Grain Granola Clusters on the shelf. We decided to experiment with making a batch of “Jammy Granola Crumble Squares” as my daughter likes to call these. She get’s all the credit for that name! Ok, let’s talk about this Gluten Free Banana Nut Soft Baked Whole Grain Granola for a minute. I love Van’s products. Both my daughter and I are sensitive to gluten so it’s vital to have snacks around that are gluten free. And she has to have yeast free, as well. Van’s just released Gluten Free Banana Nut Soft Baked Whole Grain Granola Clusters and I knew I had to have this in the house. You can do so much with granola! The bite-sized, chewy granola can be enjoyed by the handful or as a wholesome addition at breakfast, snack time or anytime! These tasty treats keep it real with no HFCS, artificial ingredients, hydrogenated oils or GMO oils! The granola is soft baked and also comes in Double Chocolate, Cranberry Almond and Blueberry Walnut. These are so super easy to make and I let my daughter pretty much make the entire recipe. I’ve included step-by-step pictures so you know exactly what to expect! I’m so glad my daughter suggested we make something fun for our trip! These squares are gluten free and worked PERFECT as a breakfast and as a snack! I had a square almost every morning with my coffee. It was a great way to start the day!

Ingredients1 cup gluten free all purpose flour, ½ cup plus 3 Tablespoons oat flour, 1 teaspoon salt, 1 teaspoon baking powder, ½ teaspoon ground cinnamon, ¼ teaspoon baking soda, 1 cup packed brown sugar, 2 eggs, ½ cup smashed banana (1 medium banana), ¼ cup unsalted butter, softened, 1 teaspoon vanilla, 2 and ¼ Banana Nut Granola, 1 10 oz jar of strawberry jam fruit spread,
Preheat oven to 350F. Coat a 13x9x2 pan with baking spray or coat with olive oil.
In a small bowl, whisk together the gluten free flour, ½ cup oat flour, salt, baking powder, cinnamon, and baking soda.
In a larger separate bowl, stir together the brown sugar, eggs, smashed banana, butter and vanilla until smooth. Add in the flour mixture from your smaller bowl and stir until well combined.
Slowly pour in 2 cups of Gluten Free Banana Nut Soft Baked Whole Grain Granola Clusters into your mixture.
