It can be a struggle getting 3 children dressed and out the door to catch the school bus each school day. Mornings can seem like a competition to see how close we can make it until we are late. One of the things that I really do not want to skimp on or miss is a healthy breakfast.
My youngest is not a huge breakfast eater, but he needs to have a full tummy before he gets to school. I have learned that non-traditional breakfast foods are a great way to get him to eat a healthy breakfast when he is not up for a full breakfast. He loves when I make him a cereal mix and put it in a baggie that he can snack on the way to school. Healthy cereal, dried fruits, almonds, and some yogurt covered raisins are his favorite combination. You can make a big batch ahead of time and portion it into baggies and hand them out as you head out the door.
Ingredients2 cups Gluten Free Cereals - Honey Crunch, 2 cups Gluten Free Cereals - Cinnamon Heaven, ½ cup raw almonds, ½ cup dried cranberries, ½ cup dried apricots, ¼ cup yogurt covered raisins,
Mix all ingredients together in a large bowl. Divide into baggies.
