February is American Heart Month, and it’s a great time to find new ways to love your heart. Van’s Love Your Heart waffles have 7g of fiber and are made with a mix of 8 whole grains, making them the perfect base for a hearty breakfast or nutritious snack. Today, I’m sharing some of my favorite waffle topping ideas because you can do so much with a waffle, other than just eating it with syrup!

Open-Faced Burrito Waffle

Swap out your breakfast or lunch burrito with this colorful open-faced burrito waffle. It’s made with black beans, diced tomatoes, avocado chunks, shredded cheddar cheese, and a little salsa to tie it all together.


Ingredients

  • 2 Van’s Love Your Heart Waffles
  • 2 tablespoons canned black beans, rinsed and patted dry
  • 2 tablespoons of your favorite salsa
  • 1 tablespoon chopped tomatoes (cut into cubes about ¼ inch by ¼ inch)
  • 10 small avocado cubes (about ½ inch by ½ inch)
  • 1 tablespoon shredded low-fat cheddar cheese

INSTRUCTIONS

  1. Toast your waffles to desired crispness.
  2. Top waffles with remaining ingredients in the order they are listed, splitting the ingredients equally between the two waffles.
