With spring in the air, thoughts naturally turn to fruits and veggies that thrive in these warmer times. Just in time, the NY Times
weighs in with a lovely little piece on mangoes, which it says are known elsewhere in the world as the “king of fruits.” Rich in vitamins and potassium and with a great taste all their own, mangoes peak in May and June, so now’s the time to seek them out.
Check out the article for a delicious-sounding puree that combines fresh strawberries with fresh ripe mango (the ripe ones should, according to the Times piece, “give a bit when pressed, and its fragrance should be heady and sweet, particularly at the stem end.”)
Another idea we’d recommend? Fresh mangos and low-fat Greek yogurt atop a warm Van’s Waffle or Vanilla Waffle Stick.
