Every Mom deserves a little treat on Sunday, and we’ve got an easy recipe that’s safe for kids (no sharp knives or stoves) while still fresh and elegant for Mom.
Cream-cheese topped waffles with fruit
Ingredients
- 2 Van’s waffles
- 4 ounces cream or Neufchatel cheese
- Fresh berries, like blackberries, raspberries, blueberries or strawberries
- Banana (optional)
- Powdered sugar
- Orange juice
- 1/8 c. slivered almonds (optional)
Step 1: Place four ounces of cream or Neufchatel cheese in a medium bowl. Add 1 tablespoon of orange juice and 2 teaspoons to 1 ½ tablespoons of powdered sugar. (Add more sugar if Mom has a sweet tooth; less if she likes a savory breakfast.)
Step 2: With a mixer on the lowest setting, gently mix the powdered sugar and orange juice into the cream cheese. Once the juice and sugar are incorporated, turn the mixer up to medium speed and beat the cream cheese until it has the consistency of whipped cream, between one and two minutes.
Step 3: If you’re using larger berries, like strawberries, and bananas, slice them into bite size pieces with a butter knife.
Step 4: Toast the slivered almonds over medium heat until they start to smell delicious. Remove from heat, transfer to a plate and set aside. KIDS: If you’re trying this step at home, be sure to ask an adult for help.
Step 5: Toast two of Mom’s favorite waffles. (We hope they’re ours, but if not, we forgive. This recipe is all about making Mom smile.)
Step 6: Top with two tablespoons of the cream cheese mixture, the fruit and the almonds. Add maple syrup, if desired, and present to Mom with homemade card.
