My kids have a long school day. They leave the house at 7:30, and do not make it home until 3:30. When they come home, they are ravenous! I struggle with what to make for them as an after school snack because I do not want to fill them up so much that they do not eat dinner. We like to eat dinner before 6, so I really just need something small with some protein (gotta get through homework!) to tide them over.
I try to make their snack before they get home and have it ready and waiting for them when they get off of the bus. Sometimes it is cheese and grapes, a cup of yogurt, or apple slices and peanut butter. When I am feeling very inspired, I like to make Banana Waffle Stackers. This is more of a method than anything, and you can use whatever combination of fruit and butters that you like. Since I am getting a whole grain waffle and chia seeds into them, I think it’s okay to use a little speculoos spread. Never heard of speculoos spread? It is like peanut butter, but has crushed spice cookies in it. It is beyond delicious. Almond butter, sun butter, or peanut butter are also perfect. When I use a natural butter, I do add a teeny tiny drizzle of raw honey.
The best part for the kids? The fancy toothpick. I can get them to eat just about anything if I put a fun toothpick through it. Makes an average every day Wednesday feel special.

Van’s Whole Grain Minis
1 banana
1 Tablespoon chia seeds
1/4 cup peanut or favorite nut butter
Toast waffles according to package directions. Slice bananas on a bias and dip into chia seeds.
Spread a thin layer of spread on one side of the waffles. Add the banana slices and top with waffle, spread side down. It helps everything stick together. Add a toothpick and enjoy!
