Just because you are eating a healthy breakfast, that doesn’t mean that your breakfast cannot be gorgeous and just a little bit decadent. My peaches and cream waffle stacks are both. Making a fruit sauce to go on your morning waffle takes no time, and you can use whatever fruit you have around. If I have fresh fruit, that is great, if I don’t, I use frozen. Sometimes I make it with strawberries or blueberries. It makes a typical morning seem really special.
My children go crazy when I serve their waffle with a little whipped cream instead of syrup. It makes a Tuesday morning a holiday. Of all of the things that I make at home, people are the most impressed by freshly whipped cream. If only they knew how easy it is to do.
Add peaches, water, sugar, cornstarch, salt, and cinnamon to a medium saucepan.
Cook over medium heat until it begins to thicken, about 5 minutes.
Remove from heat, and add in lemon juice and vanilla.
Stack waffles with whipped cream and peaches.
Peaches and Cream Waffle Stacks Recipe
1 (16-ounce) package frozen sliced peaches (or fresh fruit, if available)
3/4 cup water
1/4 cup sugar
3 Tablespoons cornstarch
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 teaspoons fresh lemon juice
1 teaspoon vanilla

Put peaches, water, sugar, cornstarch, salt, and cinnamon in a medium saucepan. Cook over medium heat it begins to thicken, about 5 minutes. Remove from heat, stir in lemon juice and vanilla.
Toast waffles according to package directions. Serve with peach sauce and whipped cream.
Whipped Cream
1 cup heavy whipping cream
3 Tablespoons sugar
1 teaspoon vanilla
In the bowl of an electric mixer, add cream. Mix on low, and gradually increase speed. Add sugar and vanilla, and beat until soft peaks form.
