It isn’t just mom that deserves a nice breakfast on their special day, dad deserves one too.
Dad will feel so loved when you place this incredible breakfast in front of him on Father’s Day. What dad doesn’t love bacon and maple syrup?
I prefer to use pure maple syrup. I use Grade B, it has a strong maple flavor. Once you start using pure maple syrup, it will be hard to eat anything else. Making the syrup is super easy. It is well worth getting some bacon grease on the stove, I promise!
I love to use my cast iron skillet for cooking bacon, but feel free to use a large sauté pan if you do not have one. Add the bacon and cook over medium heat until crispy and brown.
Remove the bacon from the pan with a slotted spoon, and drain on a plate with paper towels. If desired, add the bourbon, and let cook for about 1 minute.
Add the maple syrup and reduce heat to a simmer, and cook for 10 minutes.
Cook the waffles according to the package directions. Add the reserved bacon pieces to the top, and pour the warm syrup over the top.
8 slices thick cut bacon, sliced into small pieces
4 Tablespoons bourbon (optional)
1 cup pure maple syrup

In a large cast iron skillet or sauté pan, add bacon to pan over medium heat. Cook until brown and crispy. Remove from pan with slotted spoon, and drain on paper towel. Drain fat from pan and put back on stove. If desired, add bourbon, and let cook for 1 minute. Add maple syrup, and lower heat to a simmer. Cook for 10 minutes.
Cook waffles according to package directions. To serve, add reserved bacon to the top of the waffles, and serve with warm syrup.
