My family loves pizza, and these English Muffin pizzas are the answer for a busy weeknight. By using a
Van’s Multigrain English Muffin as the base, you are feeding your family a meal full of whole grains, protein, and vegetables. There are a million different combinations that you can make, but this Greek-style is my personal favorite. I have these ingredients in my fridge all the time, so it is simply a matter of some chopping and assembling. Everyone is happy, you fed your family a nutritious meal, and you feel great about not ordering takeout.

Van’s Multigrain English Muffins
1/2 cup hummus
1 cup fresh spinach
1 cup shredded cheddar cheese
1/2 red pepper, diced
1/2 yellow pepper, diced
1/2 small red onion, diced
1/2 cup feta cheese crumbles
1/4 black olives, sliced
1 Tablespoon oregano
Split the English Muffins in half and toast slightly in a 350 degree oven, about 5 minutes. Add a spoonful of hummus and spread all over the muffin. Add a few spinach leaves.
Layer the cheddar cheese, red pepper, yellow pepper, red onion, black olives, and feta cheese.
Put back in the oven for 10 minutes, or until the cheese has melted.
