, if we do say so ourselves). This week, we came across their collection
of kid-friendly fast recipe ideas, and while they all look great, one really stood out – their fun, better-for-you take on chicken and waffles.
uses frozen waffles (such as Van’s 8 Whole Grains Multigrain waffles or Power Grains Protein waffles), along with thinly-sliced deli chicken, canola mayonnaise, lettuce and tomatoes to create a meal that’s rich in protein, fiber and healthy fats. We love mealtime solutions that break kids out of the PB&J/mac and cheese/nugget realm, so kudos to Cooking Light
