The folks at
Cooking Light have a gift for putting together healthy, delicious recipes. (And they happen to have pretty fabulous
taste in waffles, if we do say so ourselves). This week, we came across their
collection of kid-friendly fast recipe ideas, and while they all look great, one really stood out – their fun, better-for-you take on chicken and waffles.
This one uses frozen waffles (such as Van’s 8 Whole Grains Multigrain waffles or Power Grains Protein waffles), along with thinly-sliced deli chicken, canola mayonnaise, lettuce and tomatoes to create a meal that’s rich in protein, fiber and healthy fats. We love mealtime solutions that break kids out of the PB&J/mac and cheese/nugget realm, so kudos to
