this week that looks ideal for the chillier days of fall (and is ready in only 30 minutes). As Ellie Krieger points out, vegetable soups are a perfect way to enjoy in-season vegetables – and if you’re anything like us, nothing hits the spot on the cooler, darker nights of fall than a thick and hearty soup.
This one features butternut squash, kale, chickpeas and carrots, so it’s a great source of Vitamin C, Vitamin K, magnesium and potassium. That’s a lot of nutrition in a single bowl.
